The Carrot belongs to the family of Umbelliferae. Its small, oval shaped and beige
coloured seed is very aromatic. Sprouts are ready in about 10 days. The
germination process is rather delicate: the seeds need to be constantly wellmoisturized, but never much too wet.
Carrot sprouts are rich in vitamins B, C, D, E, carotene and minerals.
Carrot sprouts have a slightly bitter taste which makes them unpleasant to some:
but if they are mixed together with other sprouts varieties such as Alfalfa or Clover,
they make up an excellent and healthful mixed salad.
